This alcohol-free Watermelon Mojito Mocktail takes less than 10 minutes and has 4 ingredients (not including the water). It’s the perfect, quick and easy summer drink. Like all paleo mocktails, this drink is refined sugar-free. Moreover, it’s made without ANY added sugars due to the naturally sweet ripe watermelon. All you need to make this recipe is a blender!
Watermelons are in season right now, just in time to beat the heat! Their high water content makes them a juicy and delicious thirst-quencher. This mocktail combines watermelon with cool mint and zesty lime juice, and the bubbly sparkling water adds an extra invigorating ‘zing’ that your tastebuds will love.

Ingredients
- ripe watermelon – I recommend seedless watermelon in this recipe. You can definitely use watermelon with seeds, but you might want to strain the mixture after blending if you choose to do so – depending on how good your blender is!
- lime – ensure you use freshly squeezed lime juice in this recipe.
- sea salt – just a pinch is all you need to enhance the watermelon and lime flavors. I highly recommend it!
- sparkling water – use your favorite brand of carbonated water or make your own seltzer with a sparkling water maker.
- fresh mint leaves – for that signature mojito flavor. Its herbal aromatic notes complement and balance the sweet watermelon and acidic lime juice.
Ingredient Substitutions
- Although I highly recommend using watermelon in this recipe as it is so refreshing, if you’d like a slightly sweeter mojito mocktail you could try using fresh or frozen strawberries for an equally delicious and refreshing drink.
- I’ve also used freshly squeezed lemon juice instead of lime juice, which works really well here.
- You can replace sparkling water with plain club soda once you ensure the ingredients are AIP/paleo compliant (no artificial additives including flavors, colors, or sweeteners).
- I don’t recommend omitting the mint. It perfectly complements this flavor profile and is a classic mojito ingredient. However, you could try using fresh basil for a different flavor.
How to Make Watermelon Mojito Mocktails
Step 1. Make the Watermelon Lime Juice
Blend the watermelon cubes with lime juice and sea salt.
Step 2. Muddle the Mint
Divide the fresh mint between two glasses. Using a muddler, gently muddle the mint leaves.
Step 3. Combine and Serve
To the glasses, add crushed ice, the blended lime and watermelon juice, and top with sparkling water. Garnish with lime slices, sprigs of fresh mint, and/or watermelon triangles, optional.
Tips & Tricks
Chill the Ingredients
To make an extra refreshing drink, chill your watermelon before cutting it up and blending. Or, keep the blended juice in the fridge until ready to serve.
Muddling the Mint
Use gentle pressure when muddling the fresh mint leaves and press down 3 to 4 times. You don’t want to tear them into small pieces or mash them to a pulp! You can use the back of a wooden spoon if you don’t have a wooden cocktail muddler.
Adjust Sweetness
Since this mocktail is completely sugar-free, you’ll want to use a really ripe watermelon for the sweetest, best flavor. It’s ripe when it’s fairly heavy for its size, has a dull, non-shiny finish, and is uniformly round. Look at the color of the webbing and the field spot as well.
However, if your watermelon still isn’t as ripe as you’d like or you want an extra of touch sweetness, feel free to add a little bit of a granulated or liquid unrefined sweetener like maple or coconut sugar, maple syrup or honey (if you don’t need this drink to be vegan).
Use Fresh Sparkling Water
Make sure your carbonated water is either newly made or just opened so the drinks are fizzy and effervescent, rather than using a pre-opened can or bottle that may have gone flat.
Strain the Juice
If your watermelon has seeds or you’d prefer a smoother, less pulpy drink, feel free to strain the blended juice through a fine-meshed sieve or strainer.
Frequently Asked Questions
This drink is best served immediately so the sparkling water stays bubbly. If you’d like to prepare ahead of time I recommend blending the watermelon with lime juice and salt, then keeping it in the fridge. Only add freshly muddled mint and sparkling water when ready to serve.

Instructions
- To a high powered blender, add cubed watermelon, lime juice and pinch of sea salt. Blend until combined.
