Spaghetti and Meat Sauce – the ultimate comfort food! This version is AIP, paleo and nightshade free made with nomato sauce and cassava flour pasta.

Growing up, spaghetti and meat sauce was one of my most favorite dinners. Today, this meal remains one that can bring me comfort after a long day. This AIP version is nightshade free and made using a nomato sauce that is rich and perfectly acidic. It’s made from a tried and tested combination of veggies and herbs that perfectly mimic the taste of tomatoes without tasting too sweet and earthy from the beets. You won’t even miss the tomatoes!

This dish comes together in no time if you have your nomato sauce on hand. I like to make a batch and keep some in the freezer to have whenever I need it for recipes such as this or AIP Sweet Potato Lasagna

Here’s what you’ll need for this AIP Spaghetti and Meat Sauce recipe:

  • Nomato Sauce – this is where all the flavor comes from. My classic nomato sauce recipe includes butternut squash, beets, celery, carrots, onions, garlic, dried herbs, red wine vinegar and honey. You’ll want to have this ready to go before you start making this meat sauce.
  • Ground beef
  • Dried thyme, basil and oregano (feel free to sub fresh herbs if you have them for even more flavor)
  • Onion powder and garlic powder
  • Sea salt
  • Olive oil

AIP Spaghetti and Meat Sauce FAQs

Can you freeze this meat sauce?

Yes, this meat sauce is great to batch cook and freeze in individual portions for lunch or dinner.

What can I substitute for the spaghetti?

If you’re unable to tolerate cassava flour pasta but you can feel free to substitute this with any vegetable noodles (e.g. spiralized zucchini, butternut squash, or sweet potatoes). You can also try my AIP hand-rolled pasta.

Can I use a different protein?

You can try this dish with ground turkey and add mushrooms to bulk it up.

Description

Spaghetti and Meat Sauce – the ultimate comfort food! This version is AIP, paleo and nightshade free made with nomato sauce and cassava flour pasta.


Ingredients

Scale
  • 1 TBSP extra virgin olive oil
  • 1 lb ground beef
  • 3/4 tsp sea salt, plus more to taste
  • 1/2 tsp dried or fresh thyme
  • 1/2 tsp dried or fresh basil, plus more for garnishing
  • 1/2 dried or fresh oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 cups nomato sauce
  • 1 8oz pack of AIP-compliant pasta

Instructions

  1. Boil pasta according to package’s specifications and set aside.
  2. To a large stock pot, add olive oil and heat over medium heat.
  3. Add ground beef, sea salt, thyme, basil, oregano, onion and garlic powder and sauté 3-4 minutes.
  4. Add nomato sauce and reduce heat to low. Allow to simmer 20-25 minutes.
  5. Taste for salt and adjust accordingly.
  6. Toss meat sauce with pasta and garnish with fresh basil.

    I made the nomato sauce and it was alot of work! Against my better judgement I added oregano as the recipe calls for .I dont use oregano normally in tomatoe sauce, only in seafood sauce and very little. Ugh i dont like oregano ! I AM Italian! I used pork and beef and used pancetta and skipped the oregano in the meat sauce. I used wine and coconut milk which I usually add to my AIP Bolonese! I ate it over spiralized zuchini with nutritional yeast.It was delicious ! I have plenty and froze nomato sauce and meat sauce!

    This meal is incredibly nutrient dense! I have a very picky 4 year old and he loves it! We use cassava noodles! I’d love to post a picture but how?

    This sounds delicious! Have you tried it with ground turkey or pork before? If so, would you recommend adjusting the spices at all? Looking forward to trying this! Thanks for an easy, healthy recipe!

      Hey Elizabeth – pork would be great, a mixture of pork and beef would be even better. I’ve also done this with ground lamb but ground chicken or turkey aren’t very flavorful/fatty on their own so would need a lot more jazzing up.

    If you freeze this, do you just defrost the sauce in the microwave when you want to use it? For how long, if so? Thanks!

      Hey Laura, yep you can freeze and reheat in the microwave. I generally use the defrost function on my microwave and timing depends on weight – so it’s contingent upon on how much of it you freeze.
