This recipe for Ginger Pork and Cucumber Bowls is simple, quick and delicious and a great weeknight dinner option that is AIP, paleo and Whole30 compliant.

This recipe is one of my favorites for an easy weeknight meal. The combination of fresh herbs with ginger and garlic really makes this taste a lot more complex and fancy than it is.

Here’s what you need for these Ginger Pork and Cucumber Bowls:

  • ground pork
  • yellow onion
  • fresh ginger
  • garlic
  • coconut aminos
  • freshly squeezed lime juice
  • cilantro
  • mint
  • cucumber

Making these bowls requires just 20 minutes of time and they are truly so delicious. Begin by sautéing the pork with the salt and aromatics. Next, add the coconut aminos and lime juice to flavor the meat. Finally, add in cilantro and mint and cook until they’re just wilted. Slice the cucumber and serve on top the pork alongside a side of your choosing.

FAQs for Ginger Pork and Cucumber Bowls

Can I substitute the pork?

Yes, this dish works really well with ground turkey or chicken in place of the pork.

Can I make this dish coconut free?

The coconut aminos in here are key to the flavor. The only other AIP substitute I can think of here would be the amazing Red Boat Fish Sauce but I haven’t tried it myself in this specific recipe.

What do I serve this with?

These cucumber bowls are finished beautifully with cauliflower rice. You could also serve with some roasted sweet potatoes or some cassava pasta with some additional coconut aminos.

Description

This recipe for Ginger Pork and Cucumber Bowls is simple, quick and delicious and a great weeknight dinner option that is AIP, paleo and Whole30 compliant. 


Ingredients

Scale
  • 1 TBSP olive oil
  • 1 lb ground pork (or ground turkey or chicken)
  • 1-inch piece fresh ginger, grated
  • 3 cloves garlic, sliced
  • 1 small yellow onion, diced
  • 1 tsp sea salt
  • 3 TBSP coconut aminos
  • 2 TBSP freshly squeezed lime juice
  • 1/4 cup cilantro, chopped (plus more for garnishing)
  • 2 TBSP fresh mint, chopped
  • 1 large cucumber, sliced

Instructions

  1. To a large skillet heat olive oil over medium heat and add ground pork, ginger, garlic and onion. Sauté 5 minutes until pork begins to brown.
  2. Add coconut aminos and lime juice and stir to combine. Cook 5-7 minutes more until pork cooks through.
  3. Add chopped cilantro and mint and cook 3-4 minutes further until herbs wilt.
  4. Taste and adjust for salt as desired.
  5. Slice cucumber and serve alongside ground pork on top cauliflower rice, cassava pasta or with roasted sweet potatoes. Garnish with additional cilantro, if desired.

    I love this recipe! So much flavor. Fairly simple although it took me longer to make. I accidentally bought pork strips instead of ground pork but it was still awesome. This is going into our regular rotation. Thank you!

    I made this tonight and it was SO good. Only mod I made was to add a splash of Red Boat fish sauce. I also drained to ground pork during the first cooking step, since the pork I got was a bit fatty. I will definitely make this again – it was so quick and tasty!

    You must have ESP because this recipe appeared at the perfect time for me! I had defrosted some ground pork but was too lazy to make dinner the night before and realized I needed to use it quickly but didn’t want something too fussy for lunch. I was able to throw this together with ingredients I had on hand (except for the mint but I didn’t miss it) and it was a tasty, quick, and healthy lunch! It wasn’t the prettiest looking bowl but even my skeptical husband really enjoyed it! Saving this for quick lunches during the work week!
