Sheet Pan Beef and Broccoli With Mushrooms
For folks with food allergies, celiac disease or for those following protocols like the AIP Diet, saucy meals are often tricky. This is definitely true for meals like beef and broccoli that typically contain top allergens like gluten and soy. Not this recipe!
This one-pan Beef and Broccoli with Mushrooms dinner is allergen-friendly and bursting with flavor. The marinade is made with chives or green onions, cilantro, ginger and garlic. Subtly sweet and salty coconut aminos replaces the traditional soy sauce or tamari sauce for a soy free and gluten-free base. Together, these herbs, aromatics and sauce taste so layered and appear complex even though the ingredients are so simple. What’s not to love about that?

Ingredients
- 1lb piece of beef, sliced into strips – my favorite cut of beef to use for this dish is flat iron steak. I cut the slices about 1/2 inch wide and 1 inch long. You can use any type of beef you like here. I have also made this dish using ground beef!
- Broccoli – don’t throw out the stems! They’re delicious in this recipe and a great way to get some extra fibre in.
- Mushrooms – cremini or button mushrooms work well, but so would portobellos chopped into small chunks
For the marinade:
- olive oil – avocado oil is a great substitute here.
- coconut aminos – this allergy-friendly, soy free and gluten-free substitute for soy sauce adds delicious flavor to this dish
- cilantro – for ultimate ease, use both the leaves and the stems.
- chives – green onions work well here too!
- fresh garlic – peel and toss the whole cloves into the food processor. If you’re using pre-minced garlic, you’ll need about 1.5 tsps.
- fresh ginger – a 1 inch piece, peeled.
- sea salt
Sheet Pan Beef and Broccoli Instructions
- Make a marinade out of coconut aminos, oil, cilantro, chives, garlic, ginger and sea salt.
- Marinate beef with half the marinade for a few minutes while you chop broccoli and mushrooms.
- Spread broccoli and mushrooms evenly on one large or two medium sized sheet pans and cover with remaining half of marinade.
- Add seasoned beef to sheet pan. Ensure that all your ingredients are evenly spaced so that they won’t steam when placed into the oven.
Serving Options and Ingredient Substitutions
- This recipe for Sheet Pan Beef and Broccoli goes really well with so many different sides. Try it with cauliflower rice, zucchini noodles or roasted sweet potatoes. Tolerate grains? This is perfect with rice or quinoa (both OK on the Modified AIP protocol!)
- Don’t like mushrooms? Try swapping them out for thinly sliced carrots instead.
- Cauliflower is a natural swap for broccoli. But asparagus also really well in this recipe. Opt for thicker stems so that they don’t get too wilted in the oven!

Description
This Sheet Pan Beef and Broccoli with Mushrooms couldn’t be easier. It’s the perfect AIP, paleo, and Whole30 approved quick meal that’s ready in under 30 minutes.
Ingredients
Marinade
- 3 cloves garlic
- 1 inch piece of ginger
- 1/4 cup cilantro
- 2 TBSP chives or green onions (plus more for garnishing)
- 1/4 cup coconut aminos
- 1/4 cup avocado or extra virgin olive oil
- 1/2 tsp sea salt
Beef, Broccoli and Mushrooms
- 1 lb beef (flank steak, or flat iron), thinly sliced
- 3 cups broccoli, chopped (stems included)
- 2 cups mushrooms (button or cremini), sliced
Instructions
- Preheat oven to 425 F
- In a food processor or high powered blender, combine coconut aminos with oil, garlic, ginger, chives, cilantro and salt. Alternatively, finely dice these ingredients and mix with salt, olive oil and coconut aminos.
- Slice your cut of beef into thin slices and cover with half of the marinade.
- Chop your head of broccoli into small florets (ensure you use up the stems too) and measure out 3 cups.
- Slice or dice mushrooms into quarters and measure out 2 cups.
- Using one large sheet pan or two smaller ones, spread out the broccoli and mushrooms evenly. Drizzle with remaining marinade and mix together with your hands to combine.
- Finally, add in beef. Ensure everything is evenly spaced and not crowded. This will ensure you aren’t steaming everything.
- Cook for 10-12 minutes on the middle rack of your oven. Then, if desired, put oven on broil and cook an additional 2 minutes for extra browning.
- Optional – garnish with sliced chives and/or chopped cilantro. Serve warm with sides of your choice.
