Description
This recipe for Ginger Pork and Cucumber Bowls is simple, quick and delicious and a great weeknight dinner option that is AIP, paleo and Whole30 compliant.

- 1 TBSP olive oil
- 1 lb ground pork (or ground turkey or chicken)
- 1-inch piece fresh ginger, grated
- 3 cloves garlic, sliced
- 1 small yellow onion, diced
- 1 tsp sea salt
- 3 TBSP coconut aminos
- 2 TBSP freshly squeezed lime juice
- 1/4 cup cilantro, chopped (plus more for garnishing)
- 2 TBSP fresh mint, chopped
- 1 large cucumber, sliced
Instructions
- To a large skillet heat olive oil over medium heat and add ground pork, ginger, garlic and onion. Sauté 5 minutes until pork begins to brown.
- Add coconut aminos and lime juice and stir to combine. Cook 5-7 minutes more until pork cooks through.
- Add chopped cilantro and mint and cook 3-4 minutes further until herbs wilt.
- Taste and adjust for salt as desired.
- Slice cucumber and serve alongside ground pork on top cauliflower rice, cassava pasta or with roasted sweet potatoes. Garnish with additional cilantro, if desired.
