Ginger Pork and Cucumber Bowls (AIP, paleo, Whole30)

Description

This recipe for Ginger Pork and Cucumber Bowls is simple, quick and delicious and a great weeknight dinner option that is AIP, paleo and Whole30 compliant. 


Ingredients

  • 1 TBSP olive oil
  • 1 lb ground pork (or ground turkey or chicken)
  • 1-inch piece fresh ginger, grated
  • 3 cloves garlic, sliced
  • 1 small yellow onion, diced
  • 1 tsp sea salt
  • 3 TBSP coconut aminos
  • 2 TBSP freshly squeezed lime juice
  • 1/4 cup cilantro, chopped (plus more for garnishing)
  • 2 TBSP fresh mint, chopped
  • 1 large cucumber, sliced

Instructions

  1. To a large skillet heat olive oil over medium heat and add ground pork, ginger, garlic and onion. Sauté 5 minutes until pork begins to brown.
  2. Add coconut aminos and lime juice and stir to combine. Cook 5-7 minutes more until pork cooks through.
  3. Add chopped cilantro and mint and cook 3-4 minutes further until herbs wilt.
  4. Taste and adjust for salt as desired.
  5. Slice cucumber and serve alongside ground pork on top cauliflower rice, cassava pasta or with roasted sweet potatoes. Garnish with additional cilantro, if desired.
