Description
These Pumpkin Spice Gummies are a quick and easy AIP and paleo Fall treat that are delicious and fun for Halloween or anytime.
Ingredients

- 1/2 cup pumpkin puree
- 1/2 cup full fat, additive free coconut milk
- 3 TBSP honey
- 1 tsp pure vanilla extract
- 2 TBSP gelatin
- 1/4 tsp cinnamon
- pinch of ginger
- pinch of cloves
- pinch of mace
- pinch of sea salt
Instructions
- To a small saucepan add pumpkin puree, coconut milk, vanilla extract and honey and heat on medium heat, whisking regularly.
- Once warm, but not boiling, whisk in cinnamon, ginger, cloves and mace and a pinch of sea salt.
- Finally, slowly add in gelatin and whisk to combine until smooth.
- Remove from heat and immediately pour into silicone gummy mold or container of choice (see FAQs below)
- Transfer the molds to the fridge for 1 -2 hours until the gummies harden.
- Remove from molds and enjoy immediately or store in a sealed container in the fridge.
