Avocado Grapefruit Salad (AIP, paleo, vegan)

Description

This AIP/Paleo Avocado Grapefruit Salad is refreshingly light and delicious. The acidity of ruby red grapefruits pairs perfectly with the creaminess of the avocado, and fresh basil adds a wonderful, bright kick.


Ingredients

  • 2 ruby red grapefruits
  • 1 medium hass avocado
  • juice of 1/2 lime 
  • olive oil (for drizzling)
  • sea salt and handful of chopped basil (for garnishing)

Instructions

  1. Peel and segment your grapefruits and peel and slice the avocado.
  2. Arrange grapefruit segments and avocado slices on a large plate/platter.
  3. Finely chop basil and sprinkle on top the avocado and grapefruit.
  4. Just before you are ready to serve, sprinkle salad with seat salt, the juice of 1/2 lime and a drizzle of olive oil.
