This AIP, paleo and vegan Avocado Grapefruit Salad is refreshingly light and delicious and comes together in no time.

Making your Avocado Grapefruit Salad
For this salad you’ll need 2 ruby red grapefruits, one medium-sized avocado, a handful of fresh basil, fresh lime juice, olive oil and salt for garnishing.
In this salad, the acidity of ruby red grapefruits pairs perfectly with the fattiness and creaminess of the avocado. Fresh basil adds a wonderful, bright kick.
The only technical part of this recipe is segmenting your grapefruits. The goal here is to remove the skin and cut alongside the membranes to release the individual segments.
Once you’ve segmented your grapefruits, peel and slice the avocado and arrange with the grapefruit segments on a large plate/platter. Finely chop your fresh basil and sprinkle on top the avocado and grapefruit. Just before you are ready to serve, finish with seat salt, the juice of 1/2 lime and a drizzle of olive oil.
While this salad has spring/summer feels due to its bright appearance and refreshing and light flavours, grapefruits are actually in their prime in the winter. That means that this salad is great year round!

Serve this beautiful dish at brunch, lunch or dinner! I love that it’s simple enough to serve with a weeknight meal, but also lends itself well to special and hearty holiday meals that need a lighter side.

I really enjoy the combination of grapefruit & avocados! We supreme the grapefruit over a bowl and then slice the avocado into the bowl with the grapefruit & all it’s lovely juices. We then opted to zest the lime rather than juice it since there was a plethora of juice already. The lime zest alongside basil was irresistible! I had to move the bowl off the table or I may have eaten it all at once. ? try this recipe!
