Description

This vegan, paleo, AIP Banana Milkshake is thick, creamy, and delicious, without any added sugar and comes together quickly in the blender. This recipe makes 2 milkshakes.


Ingredients

Banana Milkshakes

  • 1 cup full fat coconut milk (additive free)
  • 1 tsp pure vanilla extract 
  • 1 tsp cinnamon 
  • dash of salt
  • 2 very ripe bananas, frozen 
  • 6 ice cubes 

Optional Toppings

  • caramelized bananas:  1 just ripened banana +  1 TBSP coconut oil
  • caramel sauce or tigernut butter: 3 TBSP melted coconut oil + 1/4 cup tigernut flour + dash of sea salt 
  • 1/4 cup unsweetened coconut flakes

Instructions

Banana Milkshake

  1. To your blender, add all milkshake ingredients in the order in which they are listed: coconut milk, vanilla, cinnamon, dash of salt, frozen bananas and lastly, ice.
  2. Blend until smooth, adding more coconut milk or water if you prefer a thinner milkshake.

Toasted Coconut (optional)

  1. Heat a small frying pan on medium-low heat and add unsweetened coconut flakes.
  2. Stir flakes constantly so that they toast evenly and continue until they begin to brown. It’s important to watch he pan carefully as coconut flakes burn quite quickly. 
  3. Once brown, remove from pan and cool completely. 

Caramelized Bananas (optional)

  1.  Remove peel from banana and slice into rounds 1/2 inch thick
  2. Using same small frying pan, heat to medium and add coconut oil. 
  3. Add banana slices and fry for 2-3 minutes per side, until golden and caramelized. 

Caramel Sauce or Tigernut Butter (optional)

  1. Mix coconut oil and tigernut flour in a small bowl and stir until mixture comes together and resembles a creamy nut butter. Add more coconut oil if needed and sea salt to taste.
