Banana Milkshake

This vegan, paleo, AIP Banana Milkshake is thick, creamy, and delicious, without any added sugar and comes together quickly in the blender.

Want to know the food we fight over the most in my household? Bananas!

This is partly because I only like eating bananas when they’re at the sweet spot between unripe and ripe. Brown spots, forget it! The problem is, this sweet spot – where the tip of the peel is maybe even a little bit green- is fleeting, sometimes only a couple days long! So when it’s that time, back off my bananas!

Bananas with brown spots have been reserved for two things in my kitchen: banana bread baking or smoothie making. But this AIP Banana milkshake has proven that I have a new category of things to make with those over-ripe bananas.

Here’s what you need for these AIP Banana Milkshakes

The base of this recipe is two simple ingredients: frozen bananas and full fat, additive free coconut milk. I’ve also added some pure vanilla extract, cinnamon and a dash of salt to bring the flavours together.

If you’re feeling fancy and/or have more time, you can add some caramel sauce or tigernut butter to the glass before you pour your milkshake. Optional toppings include toasted coconut flakes and crispy caramelized banana slices.

FAQs

Can I make this into a banana smoothie?

Without the toppings, this milkshake could just as easily be an amazing AIP banana smoothie. You could also add compliant aip protein powder and/or collagen, and a handful of spinach to make this into a filling smoothie!

How do I store this?

This is best served fresh and will become much thinner if kept in the fridge overnight. If you’re only making this milkshake for one, I’d suggest halving the recipe so that you don’t have leftovers.

Description

This vegan, paleo, AIP Banana Milkshake is thick, creamy, and delicious, without any added sugar and comes together quickly in the blender. This recipe makes 2 milkshakes.


Ingredients

Scale

Banana Milkshakes

  • 1 cup full fat coconut milk (additive free)
  • 1 tsp pure vanilla extract 
  • 1 tsp cinnamon 
  • dash of salt
  • 2 very ripe bananas, frozen 
  • 6 ice cubes 

Optional Toppings

  • caramelized bananas:  1 just ripened banana +  1 TBSP coconut oil
  • caramel sauce or tigernut butter: 3 TBSP melted coconut oil + 1/4 cup tigernut flour + dash of sea salt 
  • 1/4 cup unsweetened coconut flakes

Instructions

Banana Milkshake

  1. To your blender, add all milkshake ingredients in the order in which they are listed: coconut milk, vanilla, cinnamon, dash of salt, frozen bananas and lastly, ice.
  2. Blend until smooth, adding more coconut milk or water if you prefer a thinner milkshake.

Toasted Coconut (optional)

  1. Heat a small frying pan on medium-low heat and add unsweetened coconut flakes.
  2. Stir flakes constantly so that they toast evenly and continue until they begin to brown. It’s important to watch he pan carefully as coconut flakes burn quite quickly. 
  3. Once brown, remove from pan and cool completely. 

Caramelized Bananas (optional)

  1.  Remove peel from banana and slice into rounds 1/2 inch thick
  2. Using same small frying pan, heat to medium and add coconut oil. 
  3. Add banana slices and fry for 2-3 minutes per side, until golden and caramelized. 

Caramel Sauce or Tigernut Butter (optional)

  1. Mix coconut oil and tigernut flour in a small bowl and stir until mixture comes together and resembles a creamy nut butter. Add more coconut oil if needed and sea salt to taste.

    This is the perfect amount of everything! I thought I had been around the tigernut “block” but combining with melted coconut oil really did something unexpectedly *actually* caramel-y. I am so excited about this one!

    Thank you so much for sharing this delicious recipe! I added a Tbs. of honey and few squares of chocolate to the blended ingredients and topped it with a small scoop of sugar free ice cream and a drizzle of caramel stevia! It was the bomb- really helped my tummy feel better 🙂

    This was delicious and exactly what I needed this morning! I made it with the tigernut butter and the caramelized bananas. I was a little worried about using so many bananas in one drink, but I did use small bananas. Hopefully that’s ok. The tigernut butter came out great. I did have to add in a bit more flour to get the right consistency, but now I have extra to use somewhere else!
