This super moist Gluten-Free Gingerbread Loaf is packed with classic gingerbread spices and rich molasses and is a perfect holiday dessert! This vegan gingerbread loaf is dairy-free, nut-free and refined sugar-free.

Gingerbread Loaf
- 2 TBSP flaxseed meal + 6 TBSP water
- 2.5 cups oat flour
- 2 tsp grain-free baking powder
- 1.5 tsp cinnamon
- 1.5 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp sea salt
- 2/3 cup coconut sugar
- 1/2 cup applesauce
- 1/4 cup avocado oil
- 1/4 cup molasses
- 1.5 TBSP apple cider vinegar
Coconut Glaze (optional)
- 4 TBSP coconut butter
- 1 TBSP coconut oil
- cinnamon, sifted (optional, for garnish)
Instructions
Gingerbread Loaf
- Preheat oven to 350F and line a standard loaf pan with parchment paper.
- In a small bowl or cup, make a flax egg by combining flaxseed meal and water. Whisk together with a fork and set aside to let thicken and congeal for at least 5 minutes.
- In a large mixing bowl, combine oat flour, coconut sugar, cinnamon, ginger, nutmeg, cloves, sea salt, and baking powder. Make a well in the center of the dry ingredients.
- In a separate bowl, combine avocado oil, blackstrap molasses, applesauce, apple cider vinegar, and flax egg.
- Pour the wet ingredient mixture into the center of the dry ingredients and stir to combine to form the batter.
- Pour the batter into the loaf pan, using a spatula to help scrape it out the bowl.
- Bake for 37-40 minutes in the middle rack of the oven. Check with a toothpick for doneness.
- Remove from oven. Let cool for a few minutes before gently transfer to a cooling rack to cool completely.
Coconut Glaze (optional)
- Melt coconut butter and coconut oil in the microwave and whisk to combine.
- Drizzle the glaze with a whisk or use an offset spatula to spread the glaze over the gingerbread loaf. It will harden as it cools.
- Dust some cinnamon in a small sifter over the top if you’d like.
