I love the smooth taste of a frothy matcha latte and start most mornings with one. Matcha is green tea leaves ground into powder form. It’s a great alternative to coffee and other teas as it releases caffeine more slowly, for longer lasting energy throughout the day without a caffeine crash. This strawberry matcha latte combines the grassy, earthy flavor of matcha with sweet strawberries for a beautiful drink that’s perfect for special occasions or whenever you want an elevated version of an iced matcha latte.
Strawberry Matcha Latte Recipe
This layered Strawberry Matcha Latte looks impressive but is really easy and quick to make. Just whisk the matcha, blend the maple syrup-sweetened strawberries, and grab your preferred milk to have this drink ready in 5 minutes!
Strawberry Matcha Latte Ingredients
- ceremonial matcha powder – the type of matcha powder you use will make a difference not only in terms of its vibrancy but in its potency and taste. While culinary matcha is good for matcha recipes that require cooking or baking, for drinking, I recommend using a high quality ceremonial grade matcha which is made from young green tea leaves. I absolutely love and recommend the Pique brand!
- strawberries – you can use fresh or frozen strawberries for the purée and use fresh strawberries to garnish the drink. Wash and hull fresh strawberries before puréeing.
- maple syrup
- milk of choice – use your favorite type of unsweetened non-dairy milk (if you tolerate dairy, that’s great too!).
Ingredient Substitutions
- Milk: You can use any type of milk that you’d like. In my recipe testing, however, I found that full fat coconut milk from a can was so dense that it didn’t create the beautiful layers as the milk sunk to the bottom of the strawberry puree. This drink will be completely vegan with any dairy-free, nut-based, or plant-based milk like oat milk, almond milk, cashew milk, coconut milk, rice milk, soy milk, etc.
- AIP Modification: This recipe fully complies with both Modified and Core AIP once you use an AIP compliant milk like unsweetened, full fat, additive-free coconut milk or tigernut milk.
How To Make Strawberry Matcha Latte
Step 1: Make the Matcha
In a small bowl, combine matcha powder and 1.5 TBSP hot water. Mix with a small whisk until smooth. Then add the remaining hot water and stir to combine.
Step 2: Make the Strawberry Purée
Next, purée the strawberries, maple syrup, and cold water in a blender or food processor.
You could also muddle or mash the strawberries with a back of a fork, then whisk them together with the maple syrup and cold water.
Step 3: Assemble
To a 16oz glass, add the strawberry purée then add ice.
Then, slowly pour in the milk to create the second layer.
Finally, carefully pour the matcha on top the milk.
Garnish with fresh strawberries if desired.
Tips & Tricks
Whisking the Matcha
If you don’t have a bamboo matcha whisk or a small wire whisk, use a milk frother, a handheld electric whisk or a blender.
Milk Density
I’ve noticed that the type of milk affects the way layers form. Heavier density milks with higher fat content like full fat coconut milk will sink straight to the bottom.
Make Strawberry Milk
You might prefer to mix the strawberries and milk together for a strawberry milk! Add your choice of milk to the blender with the strawberry purée to make a 2 layered strawberry matcha latte.
Layering Tips
Pour Over A Spoon
Slowly pour the milk and matcha layers over a spoon placed on top the glass against the walls. You can also try pouring it onto the back of the spoon as well. These gentle pouring techniques help create distinct layers and prevent them from mixing as they come out onto the surface of the layer below more slowly.
Allow Layers to Cool
Like the density of each layer, you’ll want to put the coldest layer first, which is why we add the ice after the purée. You can also try chilling the strawberry purée in the fridge before adding it to the glass. Similarly, ensure you use hot but not boiling water to make the matcha. The matcha should ideally cool a bit (while you make the purée) to a lukewarm temperature rather than still being very hot when added on top the milk, to help keep the separation.
Don’t worry too much about creating perfectly distinct layers! The colors still look really pretty altogether and will be stirred up once you serve it anyway!
How to Serve Strawberry Matcha Latte
I envision having this drink as a special treat when you need an afternoon pick-me-up or you want to have a fun and eye catching novelty drink at an event like a spring or summer brunch, bridal shower, cookout, Mother’s Day breakfast, etc.
Pair it with similarly flavored matcha treats like this Coconut Matcha Pie or a Matcha Ice Cream Sandwich. Strawberry Cookies, Gluten Free Strawberry Cake, Mixed Berry Galettes or this Lemon Custard with Strawberry Compote would also go well.

This drink is best served immediately, especially if you want to maintain the aesthetic with the individual layers and don’t want it to get too watery from melted ice.
If you’d like, you can prepare the strawberry purée in advance to save time when assembling the drink. Store the strawberry purée in the fridge for up to 5 days or in the freezer in ice trays for up to 3 months.

Fridge: If you don’t care about the layers, you can store leftover, mixed Strawberry Matcha Latte in the fridge for up to 1 day.

- 1.5 tsp ceremonial grade matcha powder
- 3 TBSP hot water (divided)*
- 3/4 cup strawberries, fresh or frozen
- 1.5 TBSP maple syrup
- 2 TBSP cold water
- ice to serve
- 1/2 cup dairy-free milk of choice (or any milk of choice)
Instructions
- In a small bowl, combine matcha powder and 1.5 TBSP hot water. Mix vigorously with a small whisk into a smooth paste until matcha is dissolved and there are no lumps. Add the remaining hot water and stir to combine.
- Add strawberries, maple syrup, and cold water to a blender or food processor and blend until smooth. Alternatively, chop strawberries and use the back of a fork to mash them until smooth, then whisk together with maple syrup and water.
- To a 16oz glass, add strawberry purée, then ice.
- Slowly pour in dairy-free milk so it creates a layer above the strawberry puree.
- Finally, carefully pour in the matcha layer on top of the milk.
- Garnish with fresh strawberries if desired.
Notes
*Let boiled water cool slightly before using.
