Description
This Mango Lime BBQ Chicken is inspired by classic Caribbean flavours of lime, mango and cilantro. It’s full of flavour, paleo, AIP and Whole30 friendly.

- 1 lb boneless skinless chicken breasts, sliced into strips
- 1 cup cubed mango
- 3 TBSP freshly squeezed lime juice
- 2 TBSP extra virgin olive oil
- 1 TBSP coconut sugar (omit for Whole30)
- 1/4 cup green onion, chopped
- 3 cloves garlic
- 1/4 cup cilantro (leaves and stems)
- 1.5 tsps sea salt
Instructions
- Combine mango, lime juice, olive oil, coconut sugar, green onions, garlic, cilantro and salt in a food processor or blender and pulse until mostly smooth.
- Pour marinade over chicken strips and coat well. Refrigerate for at least 30 minutes or longer if you have the time.
- Preheat grill to medium heat.
- Once hot, place chicken strips on grill. Grill for 5-7 minutes, then flip and baste with any remaining marinade. Grill for an additional 5-7 minutes, or until the chicken has reached an internal temperature of 165 degrees F.
- Serve immediately.
