Mango Lime BBQ Chicken (AIP, paleo, Whole30)

Description

This Mango Lime BBQ Chicken is inspired by classic Caribbean flavours of lime, mango and cilantro. It’s full of flavour, paleo, AIP and Whole30 friendly.


Ingredients

  • 1 lb boneless skinless chicken breasts, sliced into strips
  • 1 cup cubed mango 
  • 3 TBSP freshly squeezed lime juice 
  • 2 TBSP extra virgin olive oil
  • 1 TBSP coconut sugar (omit for Whole30)
  • 1/4 cup green onion, chopped
  • 3 cloves garlic
  • 1/4 cup cilantro (leaves and stems)
  • 1.5 tsps sea salt

Instructions

  1. Combine mango, lime juice, olive oil, coconut sugar, green onions, garlic, cilantro and salt in a food processor or blender and pulse until mostly smooth. 
  2. Pour marinade over chicken strips and coat well. Refrigerate for at least 30 minutes or longer if you have the time. 
  3. Preheat grill to medium heat.
  4. Once hot, place chicken strips on grill. Grill for 5-7 minutes, then flip and baste with any remaining marinade. Grill for an additional 5-7 minutes, or until the chicken has reached an internal temperature of 165 degrees F. 
  5. Serve immediately.
