Grilled Sweet Potato Wedges with Lime (AIP, paleo, vegan, Whole30)


Description

These Grilled Sweet Potato Wedges with Lime are the perfect paleo summer or BBQ side. They’re also vegan, AIP, Whole30 compliant and so easy to prepare.


Ingredients

  • 1 lb sweet potatoes, peeled and sliced in half lengthwise and then into 3/4 inch wedges*
  • 2 TBSP extra virgin olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1/2 tsp sea salt (plus more for garnishing)
  • 1/4 cup cilantro (for garnishing)
  • lime wedges (for garnishing)

Instructions

  1. Preheat your grill to medium heat (~325-350F).
  2. Place sweet potato wedges into a large bowl.
  3. In a small bow combine olive oil, lime juice and salt. Pour the marinade over the sweet potatoes and toss to combine. I like to use my hands to really massage the marinade into the potatoes.
  4. Once the grill is ready, lay the wedges onto the grill in an even layer and cover.
  5. Allow to cook 25-30 minutes, flipping the wedges halfway through.
  6. Garnish with chopped cilantro (or herb of your choice), a squeeze of fresh lime juice, and additional sea salt.

Notes

You want to ensure you keep the wedges evenly sized so that they cook in a similar amount of time. If you enjoy the skins you can definitely keep them on here, just give them a scrub before chopping the potatoes
