Description
These Grilled Sweet Potato Wedges with Lime are the perfect paleo summer or BBQ side. They’re also vegan, AIP, Whole30 compliant and so easy to prepare.

- 1 lb sweet potatoes, peeled and sliced in half lengthwise and then into 3/4 inch wedges*
- 2 TBSP extra virgin olive oil
- 1/4 cup freshly squeezed lime juice
- 1/2 tsp sea salt (plus more for garnishing)
- 1/4 cup cilantro (for garnishing)

Instructions
- Preheat your grill to medium heat (~325-350F).
- Place sweet potato wedges into a large bowl.
- In a small bow combine olive oil, lime juice and salt. Pour the marinade over the sweet potatoes and toss to combine. I like to use my hands to really massage the marinade into the potatoes.
- Once the grill is ready, lay the wedges onto the grill in an even layer and cover.
- Allow to cook 25-30 minutes, flipping the wedges halfway through.
- Garnish with chopped cilantro (or herb of your choice), a squeeze of fresh lime juice, and additional sea salt.
Notes
* You want to ensure you keep the wedges evenly sized so that they cook in a similar amount of time. If you enjoy the skins you can definitely keep them on here, just give them a scrub before chopping the potatoes
