Gluten Free Apple Pie Taquito Recipe
These Apple Pie Taquitos are crisp, sweet, and really easy to make. They’re perfect when you’re craving apple pie but want to skip making a grain-free pie crust.
The vegan apple pie filling is bursting with warm cinnamon-spiced apples, while lemon zest and juice add a touch of tartness to brighten and balance the sweetness.
Gluten free tortillas encase the gooey filling and are rolled in the cinnamon and maple sugar mixture. Bake or air fry the apple pie taquitos to golden, crispy perfection. Delish!

Apple Pie Filling
- apples – any variety will work but some hold up better to cooking like Gala, Honeycrisp, Fuji, Honeygold or Granny Smith.
- lemon – both lemon zest and freshly squeezed juice are used in the filling.
- coconut sugar
- cinnamon
- tapioca starch
- salt
- water

- gluten free tortillas – You can use store-bought or homemade gluten free tortillas. I don’t recommend using corn tortillas. I used the 6-inch Siete grain-free cassava tortillas in these photographs but I think I like them even better with my homemade tortillas as they’re a bit doughier and crisp really well!
- avocado oil – or another neutral oil, for brushing
Caramel Sauce (Optional)
- coconut cream
- coconut sugar
- sea salt
Ingredient Substitutions
- You can use the coconut and maple sugars interchangeably if you’d like.
- You can make the caramel sauce with full-fat coconut milk instead of coconut cream, just note the cooking time may be longer.
- AIP Modifications: Use my Gluten-Free Cassava Tortillas.
- I don’t recommend any other substitutions and can’t guarantee the results if you make replacements.
How To Make Gluten Free Apple Pie Taquitos
Step 1. Make Apple Pie Filling
In a saucepan over medium heat, combine the ingredients except the water and mix until everything is well combined. Then, pour in the water, stirring occasionally and allow the liquid to thicken and reduce.
Step 2. Make Cinnamon Sugar
Mix together the maple sugar and cinnamon in a large plate or shallow dish.
Step 3. Assemble the Taquitos
Place tortilla flat. Add a few TBSPs of the filling to one side of the tortilla. Fold over the edge, then roll tightly into a taquito.
Brush each taquito with oil and roll in the cinnamon-maple sugar mixture.
Step 4. Cook the Apple Taquitos
Bake the apple pie taquitos in the oven or air fryer.
Step 5. Make Caramel Sauce
Combine the coconut cream, coconut sugar, and sea salt in a saucepan over medium heat. Once ready, remove from heat and allow to cool slightly.
Step 6. Serve
If using the caramel sauce, drizzle it over the taquitos. Serve immediately and enjoy!
Tips & Tricks
Warm Tortillas
If your tortillas were in the fridge or freezer, I recommend warming them up first to ensure they’re pliable. Heat them up in a dry pan over medium heat for a few seconds per side.
Broil Taquitos
If oven-baking the taquitos and you’d like them to brown more and get crispier, broil them on HI broil for the last minute.
Customize Toppings
Add a scoop of dairy-free vanilla ice cream or a dollop of whipped coconut cream or yogurt. Instead of the optional caramel sauce, feel free to drizzle the taquitos with a dairy-free chocolate sauce by melting dairy-free chocolate.
Frequently Asked Questions
Sure! If you prefer, you can use your favorite apple pie filling. Depending on the size of the apples, you may need to cut the pieces a bit smaller. Note that my homemade apple pie filling recipe is both paleo and AIP-compliant.
Assemble the apple taquitos and place them in a baking dish. Cover with plastic wrap and store in the fridge for 1-2 days. Remove the wrapping and bake, noting you may need to add a few minutes to the original bake time.
If you want to prepare it this way I suggest serving them like enchiladas. That is, once baked, top the taquitos with your desired toppings and cut serving pieces from the entire baked dish rather than as individual taquitos. The tortillas may get soggy after refrigeration and not re-crisp as well individually.
I haven’t tested myself but think it should be fine to try with other pie fillings. Just remember to cut the fruit pieces up a bit smaller than you would for a pie or tart. Try the fillings from my Mixed Berry Galettes and Gluten Free Peach Galette recipes.
Storage & Reheating Instructions
These apple pie taquitos are best served fresh as they soften as they cool and become a cold-crisp texture.
- Fridge: If necessary, store in the fridge for a few hours. However, I don’t recommend longer storage as the tortillas can become soggy. If you do want to store ahead of time, prepare and serve as suggested in the FAQ above.
- Reheat: Reheat in the oven at 350F for 5-10 minutes until warmed through, at HI Broil for a few minutes, or in the air fryer at 400F for 3-5 minutes.

Ingredients
Apple Pie Filling
- 4 medium sized apples, peeled, cored, and diced
- Zest of 1/2 lemon
- Juice of 1 lemon
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1/4 cup tapioca starch
- 1/4 tsp sea salt
- 1 cup water
Apple Pie Taquitos
- 1 tsp cinnamon
- 2 TBSP maple sugar
- 6–8 gluten-free tortillas (6-inch size)
- avocado oil, for brushing
Caramel Sauce (optional)
- 1/2 cup coconut cream
- 1/2 cup coconut sugar
- 1/4 tsp sea salt
Instructions
Apple Pie Filling
- In a medium sized pot over medium heat, combine diced apples, lemon zest, lemon juice, coconut sugar, cinnamon, tapioca starch, and sea salt, and mix until everything is all nicely coated. Then pour in the water and stir until combined.
- Cook for 10-15 minutes, stirring every few minutes so the apples cook evenly. Don’t allow them to overcook.*
- Remove from heat and set aside until ready to roll the taquitos.
Assembly
- Place maple sugar and cinnamon in the bottom of a shallow dish or plate and mix together until evenly distributed.
- Lay a gluten free tortilla flat and top with 2 TBSP apple pie filling along one side of the tortilla.
- Fold over the edge then tightly roll up the tortilla.
- Brush the taquito with avocado oil.
- Roll the taquito through the cinnamon sugar mixture.
- Repeat with remaining apple pie filling and tortillas.
- Cook taquitos as desired, in the oven or in air fryer as instructed below.
- Remove from heat.
- If using the caramel sauce, drizzle over the taquitos with a spoon, fork, or in a drizzle bottle.
- Serve immediately and enjoy!
Oven Instructions
- Preheat oven to 350F and brush a baking dish with some avocado oil.
- Place taquitos in the baking dish seam side down.
- Bake for 12-15 minutes or until taquitos start to crisp and become golden brown.**
Air Fryer Instructions
- Preheat air fryer to 400F.
- Place taquitos in the basket of the air fryer, seam side down, spacing them out to avoid overcrowding. Work in batches if necessary.
- Bake for 4-5 minutes until crisp and golden brown.
Caramel Sauce (Optional)
- To a small saucepan over medium heat, add coconut cream, coconut sugar, and sea salt, and stir until combined.
- Once mixture comes to a boil, reduce heat to low and allow to simmer 20 – 25 minutes, stirring intermittently.***
- The sauce is ready once it has reached a dark amber color and is thick enough to coat the back of a spoon. Remove from heat and set aside to cool.
Notes
Yield can vary depending on how much filling you use in each taquito.
*Depending on size of apples, cook time may be longer or shorter. You want the apples to soften and the liquid to reduce so the mixture thickens.
**Bake time depends on the thickness of the tortillas and how crispy you want the taquitos. I used Siete cassava tortillas which are a thinner tortilla and were ready in about 12 minutes. A doughier tortilla like my homemade grain-free cassava tortillas might take a bit longer.
***If using full fat coconut milk the process will take closer to 35 minutes.
