Description
This AIP Strawberry Avocado Smoothie Bowl is super creamy and thick and filled with satiating healthy fats, protein and leafy greens. This recipe makes 2 smoothie bowls.
Ingredients

- 1/4 cup water
- 1/4 cup coconut milk (full fat, additive free)
- 1/2 tsp pure vanilla extract
- 1/2 teaspoon of cinnamon
- 2 TBSP tigernut flour
- 3 TBSP collagen or bone broth protein powder
- 1/2 cup unsweetened shredded coconut
- 1 cup packed spinach
- 1 TBSP coconut butter
- 1/2 cup cubed avocado
- 2 cups frozen strawberries
- 4 cubes of ice
Instructions
- Add ingredients to blender in the order listed and blend until smooth.
- Serve immediately with desired toppings (e.g. sliced strawberries, toasted coconut flakes, other fruit)
