Description
This AIP Beef & Broccoli Rabe dish is an easy weeknight meal that’s bursting with flavour and comes together in under 30 minutes.

- 1 bunch (roughly 1/2 lb) broccoli rabe, washed and roughly chopped
- 1 lb lean ground beef
- 2 TBSP extra virgin olive oil
- 2 cloves garlic, sliced
- 1 onion, thinly sliced
- 1/2 tsp dried thyme
- 1/2 tsp oregano
- 1 tsp salt
- 1 TSBSP fresh basil, chopped
- 1/4 cup pitted kalamata olives, drained and roughly chopped
- 1/4 cup seedless raisins
Instructions
- Bring a large pot of water to a boil.
- Once water has boiled, add chopped broccoli rabe and blanch until just wilted (~2 minutes). Strain broccoli and set aside in an ice bath to prevent from continuing to cook.
- Heat olive oil in a large skillet over medium-high heat. Add thinly sliced onion and sauté 3-4 minutes or until it begins to turn translucent.
- Next, add sliced garlic and sauté an additional 1-2 minutes so that it infuses its flavour into the oil.
- Next, add ground beef, thyme, oregano and salt and cook until meat begins to brown, stirring frequently.
- Once meat has begun to brown, add olives, raisins and fresh basil to skillet. Reduce heat to medium. Sauté 1 to 2 minutes, stirring frequently.
- Finally, add broccoli rabe to dish, stirring 1-2 minutes.
- Taste for salt and adjust as needed.
- Serve hot with your side of choice.
