AIP Beef and Broccoli Rabe (paleo, Whole30)

Description

This AIP Beef & Broccoli Rabe dish is an easy weeknight meal that’s bursting with flavour and comes together in under 30 minutes. 


Ingredients

  • 1 bunch (roughly 1/2 lb) broccoli rabe, washed and roughly chopped
  • 1 lb lean ground beef  
  • 2 TBSP extra virgin olive oil 
  • 2 cloves garlic, sliced 
  • 1 onion, thinly sliced
  • 1/2 tsp dried thyme 
  • 1/2 tsp oregano 
  • 1  tsp salt 
  • 1 TSBSP fresh basil, chopped
  • 1/4 cup pitted kalamata olives, drained and roughly chopped 
  • 1/4 cup seedless raisins

Instructions

  1. Bring a large pot of water to a boil. 
  2. Once water has boiled, add chopped broccoli rabe and blanch until just wilted (~2 minutes). Strain broccoli and set aside in an ice bath to prevent from continuing to cook.
  3. Heat olive oil in a large skillet over medium-high heat. Add thinly sliced onion and sauté 3-4 minutes or until it begins to turn translucent. 
  4. Next, add sliced garlic and sauté an additional 1-2 minutes so that it infuses its flavour into the oil. 
  5. Next, add ground beef, thyme, oregano and salt and cook until meat begins to brown, stirring frequently.
  6. Once meat has begun to brown, add olives, raisins and fresh basil to skillet.  Reduce heat to medium. Sauté 1 to 2 minutes, stirring frequently.  
  7. Finally, add broccoli rabe to dish, stirring 1-2 minutes. 
  8. Taste for salt and adjust as needed. 
  9. Serve hot with your side of choice.
