Description
This recipe for Balsamic Glazed Carrots is a simple, delicious and easy side dish that is full of flavor. These are AIP, paleo, vegan and Whole30.

- 1 lb carrots, sliced diagonally*
- 3 TBSP olive oil
- 1.5 TBSP balsamic vinegar
- 1 tsp fresh thyme
- 1/4 tsp sea salt
Instructions
- Preheat oven to 400F
- In a large bowl add sliced carrots, olive oil, balsamic vinegar, thyme and sea salt and mix together.
- Spread carrots out in an even layer on one large or two medium-sized sheet pans. You want to ensure the carrots are not crowded so that they roast rather than steam.
- Bake in the middle rack of an oven for 22-25 minutes, stirring once halfway through.**
- Add more salt to taste and serve warm.
Notes
*Ensure you slice your carrots evenly so they cook evenly.
**You may need to cook for slightly more or less time than this depending on how thick you sliced your carrots.
